Bacon Wrapped Scallops Recipe - With Wine Match

Match this starter of delicate scallops and smoky bacon with a mineral, complex white - Chardonnay or structured Rhone blends are just the ticket.
Ingredients
450G STREAKY BACON

24 SCALLOPS (CORAL REMOVED)

1 TSP CHOPPED PARSLEY
1 TSP SMOKED PAPRIKA

6 METAL SKEWERS

LEMON WEDGES, TO SERVE

Recipe Method

1. Preheat oven to 200°C/400°F/gas mark 6.


2. Rinse scallops under cold water.


3. Cut bacon strips in half.


4. Wrap each scallop with 1/2 strip of bacon.


5. Skewer 4 bacon-wrapped scallops per skewer.


6. Sprinkle with smoked paprika, seasoning both sides.


7. Bake at 200°C/400°F/gas mark 6 for 20 minutes.


8. Turn and bake for an additional 15 minutes. Arrange four scallops on each plate and serve with lemon wedges and scattered with the chopped parsley.
