Barbequed Garlic and Herb Mushrooms Recipe - With Wine Match

When you think barbecue, it doesn't have to be just meat. This simple and tasty vegan recipe takes delicious large mushrooms (Portobello would be ideal), add some tasty herbs, and that smoky taste that everyone loves. Because mushrooms have a strong savoury taste, they work well with a wide range of red wines.
Ingredients
2 TBSP EXTRA VIRGIN OLIVE OIL


2 GARLIC CLOVES, CRUSHED


1 TSP FRESH THYME LEAVES, FINELY CHOPPED


1 TSP FRESH ROSEMARY LEAVES, FINELY CHOPPED


4 LARGE FLAT MUSHROOMS


LEMON WEDGES, TO SERVE

Recipe Method

1. Heat a barbeque chargrill to a medium heat. Combine oil, garlic, thyme and rosemary in a bowl.


2. Season with salt and pepper (to taste)..


3. Coat mushrooms with oil mixture using a pastry brush.


4. Barbeque mushrooms for 6-8 minutes or until tender and slightly charred (turning halfway in between cooking)..


5. Transfer to plate and serve with lemon wedges.
