Carolina Style Ribs Recipe - With Wine Match

A classic Southern barbecue recipe with a sweet, sticky rub calls for a rich, spice-laden red to square up to the complex layers of spice in the dish. Cook long and slow with glass in hand.
Ingredients
2 RACKS PORK SPARERIBS

90G BROWN SUGAR

120ML FRESH LEMON JUICE

60ML WHITE VINEGAR

60ML APPLE CIDER VINEGAR

1 TBSP WORCESTERSHIRE SAUCE

4 TBSP MOLASSES
2 CUPS MUSTARD

2 TSP GARLIC POWDER

2 TSP SALT

1 TSP GROUND BLACK PEPPER

1 TSP CRUSHED RED PEPPER FLAKES

1/2 TSP WHITE PEPPER

1/4 TSP CAYENNE PEPPER

Recipe Method

1. To make the BBQ rub, whisk together the brown sugar, lemon juice, white vinegar, cider vinegar, worcestershire sauce, molasses and mustard. Season with granulated garlic, salt, pepper, red pepper flakes, white pepper and cayenne pepper, and mix well. Set aside.


2. Preheat an outdoor grill or smoker to 120°C (they can also be done in the oven).


3. Rub the ribs liberally with the BBQ rub, then place them in the smoker or grill. Cover and cook for 4 hours, or until very tender. Baste the ribs with the BBQ rub liberally during the final 30 minutes.


4. When cooked, the meat will easily separate from the bone. Heat the remaining BBQ rub to a boil, and serve on the side.
