Cheesy Chilli Bacon Skewers Recipe - With Wine Match

A great party food idea, these more-ish snacks are packed with flavour and will cope well with an equally punchy, ripe red with spicy notes and soft tannins.
Ingredients
14 WHOLE JALAPENOS CHILLIS, IN A JAR

250g SOFT CHEESE – MOZZARELLA, FETA, CREAM CHEESE

14 RASHERS STREAKY BACON (APPROX 300G)
14 TOOTHPICKS

PAPRIKA MAYO TO SERVE

Recipe Method

1. Preheat oven to 220ºC.


2. Remove the seeds from the jalapenos and soak the chillies in water to reduce the brine flavour.


3. Stuff the jalapenos with cheese.


4. Wrap each stuffed chilli in a slice of streaky bacon and use a wet toothpick to secure.


5. Place on a baking tray and roast for 15 -20 minutes.


6. Serve with smoked paprika mayo.



Wine Match

A ripe, medium bodied red such as Merlot would make a great wine pairing for our cheesy chilli bacon skewers recipe.
