Fish Tacos Recipe - With Wine Match

A brilliant way to jazz up any firm white fish, these quick tacos make a good lunch or sharing option - add a cool glass of crisp fruity white for good measure.
Ingredients
4 FLOUR TORTILLAS

4 TILAPIA FILLETS (OR YOUR PREFERRED WHITE FISH)

1 EGG, BEATEN

2 TBSP OLIVE OIL

6 TBPS. SOURED CREAM

1 GREEN CHILLI, SEEDS REMOVED, FINELY CHOPPED

2 TBSP FRESH CORIANDER LEAVES, FINELY CHOPPED
2 TSP FRESH LIME JUICE

1 PINCH OF WHITE PEPPER

1 PINCH OF PAPRIKA

1 PINCH OF CAYENNE PEPPER

3 TBSP PLAIN FLOUR

3 TBSP DRIED BREADCRUMBS

1 FRESH TOMATO FINELY CHOPPED

1/2 ICEBERG LETTUCE, SHREDDED

Recipe Method

1.Place the sour cream, chilli, coriander and lime juice in a small bowl and mix thoroughly.


2. Place the flour, beaten egg and bread crumbs in three separate shallow bowls. Add the white pepper, paprika and cayenne to the flour and mix well.


3. Dip the fish into the flour, then egg, then bread crumbs.


4. Heat the oil in a skillet over a medium heat and cook the tilapia for 4-5 minutes on each side or until the fish flakes easily with a fork.


5. Place a piece of fish on a tortilla, add a dollop of the sour cream mixture and sprinkle with the chopped tomato and lettuce, and serve immediately.



Wine Match

A cool glass of crisp, dry white would be the perfect pairing for our fish tacos recipe.
