Cabernet Sauvignon Wine
Cabernet Sauvignon has long been the go-to grape variety for both growers and winemakers alike. The result of a little cross-breeding between Cabernet Franc and Sauvignon Blanc, it took the best aspects of both varieties, including thick skins, hardy vines and low yields necessary to concentrate flavour. Combine that with intense aromas and the ability to add elegance and structure to any blend, and you’ve got yourself a contender in the race to become top grape.
It pops up in practically every winegrowing region around the world, either as a single varietal or in a blend, where subtle geographic and climatic differences feed into a rich range of flavours. Cabernet hotspots include its homeland of Bordeaux, where it reaches sublime levels of concentration and purity, not to mention stratospheric pricing, but also California, Australia and many more.
The flavours and aromas most associated with Cabernet include blackcurrant (specifically the concentrated cassis liqueur style), bell pepper and blackberry, with oak ageing providing hints of vanilla, cedar and tobacco, to name but a few…
