Palomino Wine

Mainly grown in Andalucía in South West Spain, this is the primary white grape used in the production of Sherry. Prior to fortification and aging, wine made from Palomino is relatively neutral, which in the case of Sherry is a good thing as it allows for the winemaker to impart their particular style into the final Sherry. The taste of Palomino ranges from citrus to green apple and it has low acidity and a low sugar content. Depending on the style of sherry, it pairs well with everything ranging from oysters and tapas to marinated salmon.
