Indonesian Style Grilled Hake Recipe - With Wine Match

This spiced fish dish is perfect on the BBQ, pair with a full bodied white wine or fruit forward red.
Ingredients
300G HAKE

1 ONION OR 3 SHALLOTS

5 CLOVES GARLIC

5 HAZELNUTS

1TBSP FRESH GINGER, PEELED

1 TEASPOON TAMARIND PASTE
1 LEMON GRASS STALK, OUTER STALKS REMOVED, CUT INTO SMALL PIECES

1 RED CHILLI

½ TSP SUGAR

½ TSP SALT

ALUMINIUM FOIL

1 TSP VEGETABLE OIL

Recipe Method

1. In a food processor blend the garlic, onion or shallots, hazelnuts, ginger, red chilli, sugar, tamarind paste and salt.


2. Place the fish in a shallow bowl, cover with the marinade and leave for about 2 hours in the fridge.


3. Heat the barbecue. Brush the aluminium foil with vegetable oil. Place the foil on the barbecue grill, place the fish on the foil and cook for 5-10 minutes, turning once, until the fish is cooked through.



Wine Match
