Lamb Sosaties Recipe - With Wine Match

Sosaties scream out for a red wine from South Africa, so give a medium bodied red with lots of fresh fruit and spice a go.
Ingredients
4 METAL SKEWERS, BRUSHED WITH OIL

500G OF LAMB CUT INTO CUBES

1 ONION CUT INTO CHUNKS

35G DRIED APRICOTS, SOAKED IN WATER OVERNIGHT
FOR THE CURRY MARINADE:

1 SMALL ONION, SLICED

PINCH MILD CURRY POWDER

1 CLOVE GARLIC, CRUSHED

10 ML OLIVE OIL

250 ML VINEGAR

1 TSP SUGAR

1 TSP BROWN SUGAR

1 BAY LEAF

PINCH OF SALT

½ TSP TURMERIC

PINCH OF PEPPER

PINCH OF CHILLI POWDER

Recipe Method

1. First make the curry marinade. Sauté the onion in oil until transparent. Add the curry powder and fry gently for another minute.


2. Add all the remaining ingredients except the lamb and simmer for a few minutes more to thicken. Set aside to cool.


3. Cover the lamb cubes with the curry marinade and leave to marinate overnight. Thread the skewers, alternating the meat, apricots and onion pieces. Grill until cooked to your liking.



Wine Match

The South African dish of Sosaties of course calls out for a pairing also from South Africa. A medium bodied red such as a Pinotage should go down very well.
