Lamb With Courgettes Recipe - With Wine Match

We love this summery lamb recipe combining the delicate flavour of the chops with fresh veg and salty feta. The lamb needs a red wine, but stick to one with smooth tannins and fresh fruit flavours.
Ingredients
3 COURGETTES

SALT AND FRESHLY GROUND BLACK PEPPER

OLIVE OIL

1 SMALL HANDFUL MINT LEAVES

1 SMALL HANDFUL BASIL LEAVES

4 LAMB CHOPS (OR 8 IF YOU'RE HUNGRY)
1 CLOVE GARLIC, PEELED AND CRUSHED

1 SPRIG ROSEMARY, LEAVES PICKED

1 BABY GEM LETTUCE, SHREDDED

100G FETA

50G ROASTED HAZELNUTS, ROUGHLY CHOPPED

100ML CLASSIC VINAIGRETTE (80ML EXTRA-VIRGIN OLIVE OIL WHISKED WITH 20ML WHITE-WINE VINEGAR AND SEASONED)

Recipe Method

1. Cut the courgettes lengthways into 0.5cm-thick slices, season with salt and brush with oil.


2. Heat a griddle pan to a high heat.


3. Char-grill the courgettes until they have good char marks on both side. Put in a bowl and stir in the mint and basil.


4. In the same pan, cook the chops for three minutes a side; add the garlic and rosemary for the last two minutes. Just before the end of cooking, to ensure the fat is crispy hold each chop fat-side down with a pair of tongs.


5. Mix the courgettes with the lettuce, feta, nuts and vinaigrette.


6. To serve spoon the courgettes on to a big plate and top with the lamb.



Wine Match

A fresh and fruity unoaked red would make a great pairing for our delicious Lamb with Courgettes recipe.
