Prawn Croquettes Recipe - With Wine Match

A great snack or tapas dish, these prawn croquettes just need a drop of fresh, fruity rosé to set them off!
Ingredients
400G COOKED PEELED PRAWNS, DICED

100G BUTTER

110G PLAIN FLOUR

2 LARGE EGGS

700ML COLD MILK
2 TSP TOMATO PUREE

6 TBSP BREADCRUMBS

SALT AND PEPPER

VEGETABLE OIL

Recipe Method

1. Make the béchamel sauce - melt the butter in a pan and add the flour, stirring continuously. Slowly pour in the milk as you stir, until you have a smooth sauce.


2. Stir in the prawns, tomato puree and season to taste. Allow the ingredients to heat slowly for about 7 minutes until the mixture is very thick and then set aside and leave to cool completely.


3.Make the croquettes - using a tablespoon scoop the mixture to make round or oval shapes.


4. Roll firstly in breadcrumbs, then beaten egg and then breadcrumbs again, ensuring that the final coating is dry.


5. Heat a generous amount of oil in a heavy deep frying pan and cook the croquettes for about 5 minutes or until golden brown.


6. Drain on kitchen paper and then serve!
