The Producer

Made from a wide range of quality vineyards in Riverina in South Eastern Australia, the grapes come from vines grown in loam soils. Classic varieties Chardonnay and Semillon are used for the whites, with the reds predominatly Cabernet Sauvignon and Shiraz.

The Winemaker

The Shiraz grapes were harvested at full ripeness to optimise flavour and colour. The must was fermented at a maximum of 25 degrees in order to help extract flavour and colour components from the grape skins. The skins were then gently pressed, with only the free run juice being kept insuring that no strong tannins would be present in the final wine. The wine was then stored on French oak staves and allowed to mature prior to bottling.

The Region

The South-East Australia wine zone includes the states of South Australia, Victoria, Tasmania and New South Wales and produces wines from a variety of different vineyard sites across the smaller regions. While these can be inexpensive blended wines, some producers also use this as a way to create their own personal blends of regional styles.

Pasta Puttanesca

The strong flavours of this traditional Italian pasta dish need a robust red to stand up to the strong flavours of garlic and olive. A New World Red from the Southern hemisphere should be just right. A blend of Cabernet and Shiraz will provide both body and fruit.

Puy Lentil Bolognese

The herb and tomato flavours in this vegan dish require a wine with a good level of fruit and acidity. Cue a soft, fruity Australian red blend of Shiraz and Cabernet, a very food friendly, smooth wine.

Roasted Quail Wrapped in Prosciutto

The strong tastes of game and air dried ham need a red with good acidity and depth of flavour. Blends of Cabernet and Shiraz are ideal, especially ones from a warm climate like Australia that really brings out the fruit flavours.
