The Producer

Salva Terra is a large family run winery to the north west of Verona. With a history going back three generations, it is now in the hands of two brothers, Eros and Lucio Furia. Salva Terra has over 200 hectares of vineyards of Pinot Grigio under direct control, either owned by them or by farmers whom they have known for generations, who understand their strict quality requirements and work closely with their viticulturists.

The Winemaker

Winemaker Beppe Caviola began his career in the late eighties consulting with several estates in Piedmont and expanded to other Italian regions over the course of the next fifteen years. He was named Winemaker of the Year by the Gambero Rosso and Slow Food guides in 2002. His focus at Salva Terra is elegance and personality, preferring balance over the use of too much oak so the wines are light, fresh and very food friendly.

The Region

The Veneto region, with its unique position between the Alpine foothills and the Adriatic sea produces a dizzying array of styles, from sparkling whites to sweet reds. The cooling sea and mountain breezes allow for the production of crisp, floral white wines, including Soave, Prosecco and the now famous Pinot Grigio delle Venezie.

Salad Niçoise

Try a light, fresh white with this classic salad - the tuna works well with crisp, easy-drinking Pinot Grigio or Sauvignon blends.

Moules Marinière

A classic French dish that works well with most light white styles. Try (of course) French whites from the Loire or Bordeaux or Northern Italian styles such as Pinot Grigio or Soave.

Sole Meunière

The fresh notes of lemon and parsley marry well with citrussy notes in the wine so try a crisp, light white from France or Italy.
