If you thought you knew Marlborough Sauvignon Blanc had its aromas and flavours pinned down to a tee, then be ready for a surprise.

For you're about to experience a wine like no other, sourcing all its grapes from one select vineyard at Dillons Point, it's designed to capture the very special nature of that place.

Harvested at night, to preserve the grapes' crispness, it's made with minimum intervention in the winery, giving you a super-pure, linear Sauvignon Blanc that would be sheer heaven with seafood (especially oysters and scallops).

Delicately aromatic sauvignon blanc with wet stone, mineral, lime zest, gooseberry and subtle passion fruit flavours. A taut, linear wine in a bone-dry style with mouth-watering acidity. Impressive purity and drive. 93 pts Bob Campbell MW, The Real Review

Blank Canvas

Blank Canvas Wines is the solo project of Matt Thomson, together with his wife, Sophie Parker-Thomson. Drawing upon Matt's science-based background, his extensive experience making wines around the world, and their joint desire to show New Zealand wines to their maximum potential, Blank Canvas wines aim to make the very best Kiwi wines available.

These wines, from the Marlborough and Hawkes Bay wine regions, are ground-breaking bottles that'll challenge any preconceptions you may have about New Zealand wine.

Masterpieces in the making, highly collectable works of art - let Blank Canvas wines take you on a wine journey you'll not forget.

The Winemaker

When you think about what goes into making the best wines, the experience and knowledge of the winemaker are critical.

Matt Thomson's resumé is impressive. Taking advantage of the fact grapes are harvested at different times in the northern hemisphere compared to New Zealand, he's worked both there and in France and Italy. 2016 saw his 50th vintage, thanks to this 'flying winemaker' approach.

Matt's successful wine consultancy business, Kiwi-Oeno, has given him experience with lots of different types of grape varieties, and the wines they make. From Refosco, Corvina, and Garganega in northern Italy, to Vermentino, Picpoul, and Carignan in the south of France.

The Region

Given its a relative newcomer to making wines, New Zealand is blessed with some exceptional wine regions. Most famous of all is undoubtedly Marlborough, forever linked to the runaway Kiwi wine success: Sauvignon Blanc.

This strikingly beautiful wine region is found at the northeastern tip of the south island. Whilst it's Sauvignon that's by far and away the top variety here, Chardonnay, Riesling, Grüner Veltliner, and Pinot Noir are all making some of the best New Zealand wines you'll ever taste.

Hawkes Bay, near Napier on the north island, is best known for its red wines, thanks to some top gravelly soils and ideal ripening conditions. Blank Canvas' Syrah comes from this red wine hotspot.

Moules Mariniers

A classic French dish which is surprisingly versatile with many styles of wine - for a slightly different take, try a ripe, citrussy New World white such as Semillon or the classic Sauvignon Blanc from Marlborough.

Crab Cakes

The delicate crab meat calls for a smooth, fruity, floral white or rosé which doesn't overpower the meat - try Southern French rosés with good weight of fruit or a NZ Sauv Blanc.

Cauliflower Steaks with Olive and Herb Salsa

Impressive enough to be the focal point of the meal, or will pair beautifully with fresh meat or fish. But, first and foremost, eat these cauli steaks with a glass of Blank Canvas Sauvignon Blanc.
