The Producer

The Labry estate, run by Bernard Labry, cultivates 16 hectares of vineyards spread over four villages. This wine comes from the village of Baubigny where the vines run parallel to the famous Cote de Beaune hillside, birthplace to some of the world's best white wines. The soil consists of clay and limestone with substantial iron and manganese.

The Winemaker

All the grapes are carefully harvested by hand and after traditional fermentation the wine is matured in open vats. The wine spends 10 days in these vats, after which it is bottled and kept for a few months to settle before being released.

The Region

Burgundy's Cote de Beaune is the southern half of the famous Cote d'Or, perhaps the world's most famous wine growing slopes, south of the town of Beaune. More whites are produced here than reds, with world famous names such as Meursault and Puligny-Montrachet. The Hautes-Cotes appellation covers the vineyard area above the main Cote d'Or slopes, and in the outerlying valleys, producing lighter, earlier drinking styles.

Chicken & Lentil Salad

The earthy flavours of lentils pair well with both medium-bodied reds and whites, while the addition of chicken suggests a richer style of white - Burgundy is a classic pairing, so try the Domaine Labry, Côtes de Beaune Blanc with this dish.

Rosemary Roast Turkey

Not just a Christmas classic. The mix of light and dark meats and herbaceous rosemary make this dish the perfect match for light reds and richer whites, especially from Burgundy. We think Domaine Labry make beautiful wines.

Mackerel Pate

Contrast the smoky fish flavours with a good dose of ripe fruit and a zesty acidity, try French Sauvignon or Chardonnay from Côtes de Beaune.
