A fantastic-value Chilean Cabernet from the multi-award-winning Casas del Bosque winery, heralded as one of Chile's rising stars. The Cabernet fruit is sourced in the Rapel Valley and was aged in oak for ten months. Packed with plum and cherry fruit, it's juicy and with lifted notes of spice and even coffee bean if your taste-buds are up to it. Ideal as a partner to steak or hamburgers.

The Producer

Family owned winery Casas del Bosque was founded in 1993 by Juan Cuneo Solari. The son of an Italian immigrant, he had always dreamed of having his own vineyard and chanced upon an area of the Casablanca Valley, 100k due west of Santiago, with its pine forests, olive groves and small, white abandoned adobe houses. He chose to name the winery Casas del Bosque, or “Houses of the Forest.” The winemaking team are evangelical about translating the character of the vineyard and grape in to the final wine, using longer than average skin contact to extract extra flavour from the grapes. Some vineyards are under organic management and the winery is currently beginning the process towards Wines of Chile Sustainability Certification, which is the first step on the way to organic certification.

Winemaking

The winemaking team at Casas del Bosque work with consultant winemaker Grant Phelps. Grant arrived at the winery in 2010 although his winemaking experience in Chile stretches back over 14 years. Making wine since the age of 20, following a MSc in Viticulture and Oenology (he claims to have been breast-fed Sauvignon Blanc), Grant has worked his way through much of the winemaking world, including stints in his homeland of New Zealand, Australia, France and California.

The Region

Chile’s winemaking history goes back over 460 years, despite a relatively recent introduction to UK wine drinkers thanks to reliable, well priced wines from recognisable grape varieties. Sandwiched between the Pacific and the Andes, its dry, warm climate enjoys high temperatures which are moderated by the cooling effects of these two great forces of nature. The Casablanca Valley is a real deal ‘cool-climate’ region, a current buzz word among wine lovers which to denote a (generally) New World wine region which enjoys a more European style climate and therefore wines.

Roast Lamb With Herb Butter

Lamb is a classic match for Cabernet Sauvignon, Tempranillo or Sangiovese with the balanced tannins and cedary flavours of the wine perfectly matching this simple, easy roast. Our Casas del Bosque Winemaker's Selection Cabernet Sauvignon goes very well with this dish.

Skirt Steak with Chimichurri Sauce

This robust, flavoursome cut is nicely balanced by the punchy, herby sauce. Skirt needs a relatively well-structured red to soften the meat flavours, so plump for oaky Garnacha or new world Cabernet but remember not to go too full-bodied or risk drowning out the green sauce.

Carolina Style Ribs

A classic Southern barbecue recipe with a sweet, sticky rub calls for a rich, spice-laden red to square up to the complex layers of spice in the dish. Cook long and slow with a glass of Casas del Bosque Winemaker's Selection Cabernet Sauvignon in hand.
