The Producer

The 16 Stops wines are made at the Willunga 100 winery under the watchful eye of consultant winemaker Tim James, with much of the fruit sourced from the same vineyards. The wines blend the fruit from the McLaren Vale with that of the Adelaide Hills to combine the best of both areas, with riper flavours from the McLaren Vale, and fresh, mineral notes from the Adelaide Hills.

Slow Cooker Beef Brisket

A super-simple one pot recipe using a flavoursome cut of brisket. Try with a fruity, medium-bodied red like the 16 Stops Shiraz to contrast nicely with the meaty, savoury sauce. Full recipe

Top 10 Best-Selling Red Wine

Discovered this wine at a restaurant in Devon and then found it at Rude Wines - have bought it twice now and will continue to do so as it is a really good value Pinot Noir that compares very favourably with some of the best Blauburgunders costing twice the price or more. Graham

The Producer

Family owned winery Casas del Bosque was founded in 1993 by Juan Cuneo Solari. The son of an Italian immigrant, he had always dreamed of having his own vineyard and chanced upon an area of the Casablanca Valley, 100k due west of Santiago, with its pine forests, olive groves and small, white abandoned adobe houses. He chose to name the winery Casas del Bosque, or “Houses of the Forest.” The winemaking team are evangelical about translating the character of the vineyard and grape in to the final wine, using longer than average skin contact to extract extra flavour from the grapes. Some vineyards are under organic management and the winery is currently beginning the process towards Wines of Chile Sustainability Certification, which is the first step on the way to organic certification.

Plump for a ripe, fruity white such as Chardonnay or lighter red with silky tannins and red fruit flavour, such as New World Pinot Noir, to contrast with the salty tang that the pancetta and cheese bring to the dish. Try the Casas del Bosque for size. Full recipe

The Producer

Owned by Trevor and Robyn Bolitho, Waimea Estates started out life as a horticultural operation, but the couple soon saw the potential in the local area for the production of quality wines. Their wine adventure began with the planting of vineyard sites in1993-1995, resulting in an award for their first Sauvignon Blanc vintage in 1997. Sustainable farming is at the forefront of their philosophy, with minimal intervention in the vineyard and winery and an emphasis on the health and wellbeing of the surrounding environment.

Pea And Goats Cheese Risotto

Risottos pair well with both reds and whites so consider the other ingredients when choosing a wine match - the combination of sweet peas and salty goats cheese call for a vibrant white with lots of fruit flavour - try northern Italian whites or aromatic New Sealand whites such a Sauvignon blanc. Smells like the cinema (popcorn?). Lovely full flavour - tastes like berries in a trifle.

Chilean

A smooth red with hints of cherry - this wine would be nice with a slight chill in the fridge.

Citrus Fresh

I dream Chardonnay, Chenin Blanc, and Gavi but this very citrus tasting Sauvignon Blanc went down nicely with some extra mature Cheddar.
