From the sunny Kamptal region in Niederösterreich (Lower Austria), this is made by biodynamic producer Fred Loimer, a pioneer in all things sustainable. The native Austrian grape produces here a crisp, racy style with fresh apple, mineral notes and a zesty finish, thanks to maceration of the grapes on the skins and a period of ageing on the lees. It's bone dry, lip-smacking and very versatile with food - enjoy with seafood, salads or spicy Thai dishes.

Buy this if...you're a Grüner virgin.

Suitable for vegetarians and vegans.

Taut, racy and mouth-watering - no, not us! This is the perfect introduction to Austria's supermodel grape, Grüner Veltliner.

The Producer

Austria is home to the Grüner Veltliner grape and Fred Loimer is one of its best winemakers. Fred owns 60 hectares around Langenlois, in the Kamptal region of lower Austria and the estate has produced only organic wines since 2006 and more recent experiments with biodynamics have proved very successful. The Loimer philoposhy is all-encompassing and constantly improving on ideas for sustainability, with the utmost respect for the environment and its people. Powerful stuff.

The Winemaker

Unlike many Austrian winemakers who go for an overly rich and sweet style, Fred gets full ripeness in the vineyard yet ferments to dryness, producing wines with zest and balance on the palate. Experimental techniques are never far from his mind, with white wines fermented on their skins, undergoing carbonic maceration or even fermenting Grüner in qvevris which are enormous clay jars buried in the ground (according to a 7,000 year old Georgian method no less).

The Region

The Kamptal valley is situated in eastern or 'lower' Austria, close to Vienna. The Kamp river feeds in to the Danube further downstream but it is on the wide slopes of the lower valley that you'll find vineyards, planted at between 200-400 metres above sea level. With hot summers and cold winters, grapes such as Grüner Veltliner and Riesling reign supreme.

Veal with Creamy Mushrooms

Veal pairs well with soft, light reds or structured whites - try lightly oaked Chardonnay or a crisp Gruner Veltliner with enough acidity to cut through the creamy sauce but not overshadow the delicate meat.

Moules Marinière

A classic French dish which is surprisingly versatile with most whites. Try a bone dry, mineral white to complement the delicate, saltiness of the mussels.

Smoked Haddock with Creamy Lentils

A delicious smoked haddock together with rich, creamy lentils needs a wine with plenty of fruit concentration and structure to stand up to the contrasting smoky, earthy and creamy notes. For weight and body, try a crisp European white with plenty of structure.
