The easternmost side of Chablis is home to 'Les Blanchots' wine and its hallmark elegant, floral bouquet of lily, rose and hints of flint and smoke. This Grand Cru plot is infamous for its distinctively floral character.

The classic racing acidity of Chardonnay from Chablis is balanced beautifully with the full mouthfeel from its time spent in oak and on fine lees.

A classic Chablis that can be drunk young, or left for several years to develop and mature. When young, expect the intense floral notes and bright lemony acidity. With age, honeyed notes will develop.

Enjoy this sought-after Chablis with seafood, or poultry. We'd also recommend truffles and Burgundian cheeses.

The Producer

The Bichot family settled in Châteauneuf-en-Auxois, Burgundy in 1350. The family’s coat of arms has not changed since nor has its symbol, a doe or biche, in French. Their wine heritage started in 1831 with Bernard who was a wine trader. It was his son, Hippolyte, that brought the first vines in Volnay and his grandson, Albert, that rooted the Bichot name in Beaune from which the family business escalated. Since 1996 Bichot has been run by Albéric Bichot who is completely focused on developing the future of the company without compromising family tradition or quality.

The Winemaker

In 2007, Matthieu Mangenot joined Albert Bichot as manager of the Domaine Long-Depaquit estate in Chablis after spending time at different estates, notably in South Africa, Lebanon and Bordeaux to gain a wealth of vineyard and production experience. Through in-depth work in the vineyards - helped by his vineyard manager, Olivier Deboudt - he puts the grape at the heart of the strategy of showcasing the terroirs and supports a non-interventionist approach at the winery.

The Region

Château Long-Depaquit is located at the heart of the village of Chablis, in Burgundy’s Yonne department. The winery was rebuilt in 2014 and has an exceptional 65 hectare legacy. Located on the easternmost side of Chablis, "Les Blanchots" is a plot that is unique among the Grand Crus of Chablis. The vineyards benefit from a sustainable approach to viticulture. Yields are limited and interventions are kept to a minimum during winemaking. Barrel ageing is used in moderation to best preserve the expression of each terroir as the "Blanchots" has a very distinctive and dominant floral character with remarkable finesse.

Duck Breast With Wild Mushrooms and Cream

The rich, fatty flavours of duck, combined with creamy mushrooms call for a soft, smooth red with fresh fruit flavours or fuller bodied white with some barrel ageing. Head to Albert Bichot wines of Burgundy for light or medium bodied reds such as Pinot Noir, or fruit forward Chardonnay with a floral edge.

Chicken Paupiette filled with Sundried Tomato and Mushrooms

The multi-layered flavours of medium-bodied mushroom, sweet, sun-dried tomato and rich aubergine and pepper calls for a bit of an all-rounder. A soft, easy-drinking red will cover all the required taste bases, as will Chablis from Domaine Long-Depaquit's Les Blanchots.
