Stephanie Toole's managed to carve out a very special relationship with Riesling, producing this stunning single vineyard wine that ranks as one of Australia's best. Given her partner is none other than Geoffrey Grosset, an Australian winemaking legend, she's managed to create wines that are very much her own.

The Watervale vineyard, surrounded by cattle-grazed grassland, is managed to strict organic standards (it's certified organic), giving her top-flight grapes to play with. Fresh cut lime and lemongrass mingle in your glass in an enticing array of aromatic finesse, with a crisp and fresh citrusy palate that's so pure and long it's dazzling in its intensity.

A wine that's perfect now, but will evolve over the next decade or two.

This is my favourite vintage of Stephanie Toole’s dry Riesling in years! The slender, rapier sharp fruit is epic with pithy, chalky notes and no overt juiciness whatsoever. It is a very grown up and stripped down style and this makes it ravishing. Matthew Jukes’ 100 Best Australian Wines

The Producer

Nestling in the Clare Valley north of Adelaide, lies the idyllic setting of Mount Horrocks, a tiny 10 hectare organic estate with a very big following. Under the watchful eye of owner and winemaker Stephanie Toole, who bought the estate in 1993, Mount Horrocks is pretty much at the forefront of the Aussie cool-climate winemaking revolution, showing the world that the country can produce refined, aromatic styles with the discreet use of oak. Only 6 wines are produced, all from organically certified, estate owned vineyards at a cool altitude of 475 metres.

The Winemaker

In Stephanie's own words, her wines are: “essentially hand-made food wines with emphasis on structure as well as generous fruit flavours” (food wines offer a well-balanced combination of crisp acidity, good structure and weight of fruit). She limits production to just 3,500 cases in total each year to be able to concentrate on the highest quality production from the single vineyard sites.

The Region

The Clare Valley, a tiny wine producing region just 22km by 7km, nestles in the northern Mount Lofty ranges, north of the city of Adelaide. With vineyard sites at around 450m above sea level, and the proximity to the cooling effects of the Southern Ocean, this is one of Australia's real-deal cool-climate regions and has been producing wine for over 130 years. Riesling is a key player here, a late ripener which appreciates the cool sea breezes and all important day-to-night temperature fluctuations, producing full, dry styles with long ageing potential. Other grapes include Semillon, Chardonnay and European style Syrah and Cabernet Sauvignon.
