Wanting to make a rum that reflected the rich heritage of this powerful spirit, Richard Davies went to the best to produce his Neptune Rum.

It's a completely organic rum (whereas many add flavouring and colouring to theirs) that's aged on Barbados in American Bourbon barrels. To get the necessary complexity they're after, that takes three years, mixing both pot and column distillates in the barrels. Travelling over the Atlantic it's at cask strength of 68%, which comes down to 40% when it's bottled over here.

Look for the classic Bajan aromas of pepper, vanilla, light oak, and a hint of fresh peaches. Taste-wise, it comes over as much more complex than its three years.

That's probably a major reason it's proved such a palpable hit in competitions all over the world. Very smart addition to your drinks cabinet.

Foursquare Distillery

The Daily Telegraph calls it the 'world's best rum distillery', and that's largely down to Richard Seale's refusal to cut corners, preferring to make this special spirit in time-honoured fashion. Which means their rums are simply the best. Premium rum that repays all that hard work in the distillery by the aromas and flavours in your glass.

Making Rum

Only fully traceable, organic products are used in Neptune Rum's distillation. It's then aged on Barbados, in American oak barrels once used for Bourbon. This takes three years, with the local climate making the maturing process faster. It has all the hallmarks of a much older, and more expensive rum.

Neptune Martini

It's Richard Davies favourite way to drink his rum. No better recommendation. It's as simple as switching the usual vodka for Neptune Rum, in the classic Espresso Martini recipe. Just add a sprinkle of nutmeg for seasoning and you'll be bowled over.
INGREDIENTS

Sugar syrup:

100g golden caster sugar

Cocktail:

ice

100ml Neptune Rum

50ml freshly-made espresso coffee

50ml coffee liquer (like Kahlua)

4 coffee beans
METHOD

1. Start by getting your sugar syrup ready. Place the sugar in a small pan over medium heat and add 50ml water. Stir, letting the liquid come to the boil.

2. Turn off the heat once the sugar's dissolved. Let cool. Put two martini glasses in the fridge to chill.

3. Pour 1 tbsp of the cool sugar syrup into a cocktail shaker plus a handful of ice, the Neptune Rum, espresso, and coffee liqueur. Shake vigorously until the cocktail shaker is ice cold on the outside.

4. Strain into the cold glasses. Add the coffee beans as a garnish.
