Made by IWC 'Red Winemaker of the Year' Alain Serveau, this is a single vineyard which surrounds the Chateau Gris in Nuits-St-Georges. Classic quality Burgundy with black fruit aromas in abundance - the palate has a delicate sweetness and is perfectly balanced with the tannins and wood and there is a nice fresh fruitiness on the finish. Try it with duck fillets or roast pork or rich cheeses such as Epoisses. Open at least one hour before serving to let the wine take a breather.

The Producer

The Bichot family settled in the Chateau of Châteauneuf-en-Auxois, Burgundy in 1350. The family’s coat of arms has not changed since nor has its symbol, a doe, or biche in French. Their wine heritage started in 1831 with Bernard who was a wine trader. It was his son, Hippolyte, who brought the first vines in Volnay and grandson, Albert, who rooted the Bichot name in Beaune from which the family business escalated. Since 1996 Bichot has been under Albéric Bichot who is completely focused on developing the future of the company without compromising family tradition or quality.

The Winemaker

The winemakers of Albert Bichot are world renowned. They were awarded 'Red Winemaker of the Year' in 2004 and 'White Winemaker of the Year' 2011. The team have recently been awarded the title of 'Red Winemaker of the Year' 2017 at the International Wine Challenge 2017. This new recognition rewards their teams’ daily efforts and the continuous attention paid to every detail from vine to finished wine and uncompromising choices in terms of quality.

The Region

The Cotes de Nuits is the northern part of the famous Cote d'Or, Burgundy's classic red wine region, producing rich, complex wines from the Pinot Noir grape. This region is large in stature but small in size, with vineyards stretching from the lighter styles of Marsannay in the north to the full bodied Nuits St Georges in the south, with these two villages just 15 miles apart. The vineyard sites squeeze in a total of 25 Grand Crus and over a hundred Premier Cru sites, with some vineyards split amongst many individual growers who make tiny quantities of wines from just a few rows of vines.

Aubergine & Mushroom Bourguignon

A vegan version on the classic Beef Bourguignon. Just as rich, just as rustic and in no way inferior. A glorious warming dish that invites earthy light and medium bodied reds with a hint of age including Malbec and Cabernet Sauvignon or top-notch Burgundy such as our 1er Cru Château Gris.

Roast Lamb With Herb Butter

Lamb is a classic match for red wine with the balanced tannins and cedary flavours of the wine perfectly matching this simple, easy roast. This aged Pinot Noir from Bichot would be a great match.

Venison Stew With Sage-Infused Glazed Carrots

Stew just like your Grandma used to make. A warming, earthy venison stew with a rich and decadent gravy is the perfect food match for medium to full-bodied reds. Try a bottle with a hint of oak and age, it will complement the earthy root veg and intensity of the meat and gravy. Think rustic, classic regions – Bordeaux, Aged Burgundy and warming Stellenbosch.
