We're lucky to get our hands on any Pouilly Fumé in the very small 2016 vintage but the tiny amounts showcase the Sauvignon Blanc grape in all its splendour. There's freshness and depth, with citrus and floral notes on the nose, along with the telltale whiff of gunsmoke. The flavours are ripe and intense, laced with a fresh citrus acidity. This is a young'un but it's drinking well already and will continue to improve for some time. Enjoy with smoked fish, shellfish or anything involving goat's cheese.

Buy this if...you like your Sauvignon long and lean.

Loire Sauvignon Blanc at its lean, elegant and intense best.

The Producer

Situated in the heart of the Pouilly-Fumé appellation, Domaine Jean-Pierre Bailly has seventeen hectares of vines growing on limestone and the Kimmeridgian marl soils, perfect material for the production of the classic flinty, smoky notes found in the best Pouilly Fumé.

The Winemaker

Taking over the reins from father Jean-Pierre in 2000, Patrice Bailly produces wines with a distinctive fruitiness, helped by a cool, temperature controlled fermentation. The wines spend some months ageing on the fine lees, a process which also adds depth and richness to the wines.

The Region

The vineyards of Pouilly Fume can be found across the river from Sancerre in the eastern Loire Valley, with white wines produced from Sauvignon Blanc. The word fume refers to the universally recognised aromas of smoke and gun-flint found in the wine which comes from the unique clay-limestone soils and Kimmeridgian marls which are found on the slopes close to the river.

Whipped Goat's Cheese

A super-simple but very effective use for goat's cheese, this makes a good party dish for sharing, with the peppery radishes contrasting perfectly with the creamy cheese. Stick with the classics and go for French Sauvignon Blanc.

Smoked Haddock, Emmental & Creme Fraiche

The combination of smoked fish, cream and cheese will cope well with a fruity, citrussy white with a clean, mineral structure.

Chicken in Grape Sauce

A traditional French sauce, with its delicate, creamy flavours served here with roast chicken, needs a ripe, fruity white to stand up to the sweetness of the sauce.
