The Producer

Top Veneto producer Fabiano source our Prosecco through a co-operative winery in the foothills of Montello and Asolo. Established in 1957, the co-op has over 600 hectares of vineyards at its disposal on a wide variety of sites. Low yields and strict selection of grapes is a must, and the latest technology ensures that the wines are produced consistently and with an emphasis on quality over quantity.

Fish Tacos

A brilliant way to jazz up any firm white fish, these quick tacos make a good lunch or sharing option - add a cool glass of crisp sparkling wine for good measure.

Domaine de Pellehaut is a family-owned property and chateau with 250 hectares of vines grown on slopes of up to 180m in altitude. The proximity to the Pyrenees provide a welcome shelter from bad weather, with very low rainfall and warm, sunny summers. Brothers Martin and Mathieu Beraut produce wines from both local and well-known grape varieties, including our very own Rude Reserve Blanc, a blend of Colombard and Chardonnay, with a smattering of Sauvignon Blanc, Petit Manseng and Ugni Blanc.

Spicy Fish Braai

Super-simple but very effective, the spicy marinade on barbecued hake combines sweetness, heat and plenty of flavour. Try a tropical-fruited, aromatic white wine such as a Côtes de Gascogne blend.

The Producer

Family-owned Domaine de Cassagnau is situated in the heart of the Languedoc region, due south of Carcasonne. The success of the estate has very much relied on the women of the family, with Berthe Abet in charge of the domaine for six decades and through two world wars. A doctor by profession, Jacques inherited the estate from his mother, Berthe's daughter Jacqueline, and continues the family business with wife Collette.

Roasted Tomato & Garlic Pasta

Tomato based sauces match well with light or medium bodied reds with high acidity which square up to the acidity in the tomatoes and make both food and wine taste fruitier. Try a classic French red or fruity New World style with little or no oak ageing.
