Made by the Millet family who have been running their sustainably farmed estate in Sancerre for five generations, this is a classic Sancerre style from the homeland of Sauvignon Blanc. Intense and rich with notes of gooseberry on both nose and palate, with a touch of minerality which makes this an all-round refreshing glassful. Delicious partnered with sushi or grilled fish.

The Producer

Here's a classic family-owned French wine estate. Domaine des Côtes Blanches was founded in the 1930s by Bernard & Pierre Millet. Fast-forward to 1980 and François & Monique, the next generation, expand the estate to 21 hectares, split between Sauvignon Blanc and Pinot Noir (15 to 6 Ha).

Most recently, Nicolas, their son, has joined the family wine business. His studies at Beaune have brought a fresh perspective to this excellent Loire estate. It's farmed organically, and in the winery gravity flow reigns (not pumps) to minimise the wines' handling.

The Winemaker

The Sauvignon Blanc grapes are picked carefully in the cool of the morning to retain freshness and lightly pressed before fermentation in stainless steel and maturation for up to 6 months in tank before release.

The Region

The slopes face due south and have two very distinct terroirs. The 'Caillottes' is a very stony soil mainly composed of limestone and the 'Terres blanches' are chalky clayey soils with loose stones called 'terres blanches' because of the whitish colour they have when they dry after the rain. 21 hectares in total are planted, three-quarters of which is Sauvignon and a quarter Pinot Noir.

Goat's Cheese Cooked in Vine Leaves

There are few better food and wine pairings than goat's cheese with Sauvignon Blanc, with the natural high acidity of the cheese squaring up to the same in the wine. The salty, creaminess of the cheese contrast well with the ripe fruit flavours in Sancerre.

Roast Chicken with Garlic & Lemon

Roast chicken is an extremely versatile dish to pair with both light reds and whites. The addition of lemon needs a white with zesty, citrus notes to complement the chicken juices - try Loire or Bordeaux styles for the suitably lemony tones.

Sole Meunière

The fresh notes of lemon and parsley marry well with fresh, citrussy notes in the wine. Try the mineral, crisp Domaine des Côtes Blanches Sancerre which will also have enough body to cope with the meat.
