Philip Shaw's Viognier vineyards are at 900m above sea level, producing an aromatic, refreshing wine at just 11.5% ABV. This complex grape gives layers of dried apricot, lemon and exotic spice, with a silky soft texture and juicy acidity balanced by a hint of sweetness on the finish.

Buy this if...you love silky, smooth whites.

Dreamy soft fruit contrasts with opulent spice and a refreshing dollop of lemon sherbet.

The Producer

Searching for the ideal site to plant a vineyard proved to be a 20 year journey for winemaker Philip Shaw but the final choice came by accident as he flew over the rolling hills of Orange in New South Wales in 1988. Further investigation revealed a wonderful balance of sunshine, soil, differing aspects and of course the high altitude at 900m above sea level that contributes to the unique freshness and concentration in the wines. The 47 hectares of vineyard are on the slopes of the now extinct volcano Mt Canobolas, making it one of the highest vineyards in Australia.

The Winemaker

Two-time winner of the International Wine Challenge Winemaker of the Year Award, this is Philip Shaw's solo venture after decades of premium winemaking in Australia. Tellingly, he waited nearly 20 years for the vineyard to reach full maturity before attempting to produce wines to sell and believes that the final wine is a marriage between the vineyard and the winemaking - not refining it, but getting it right first time.

The Region

Located approximately 260km west of Sydney on the slopes of the Great Dividing Ranges, the Orange vineyards beginning at around 600m above sea level, rising to 1,100m. The high altitude of the Koomooloo vineyard offers cool ripening conditions and high levels of ultra-violet light which greatly assist in flavour and colour development of the berries and a long cool ripening season with low rainfall.

Chicken and Almonds

This classic French recipe works beautifully with medium-bodied, rich whites which are just off dry - head for floral, nutty tones in the wines.

Spicy Fish Braai

Super-simple but very effective, the spicy marinade on barbecued hake combines sweetness, heat and plenty of flavour. Try a tropical-fruited but light white wine.

Singapore Noodles

This vibrant, umami-rich noodle dish works perfectly with light, floral whites.
