Sourced from vineyards in the Elgin Valley south-east of Stellenbosch, the maritime influence is never far away, resulting in an intensely aromatic, fresh style of Sauvignon. 5% of the blend is fermented in older barrels then matured for five months. The nose has an interesting aroma of tangy sea air, nettles and greengage. Complex and refreshing, the palate is seriously fruity with typical cool climate Sauvignon Blanc flavours of greengage, quince, guavas leading to a crisp lingering finish. Match with asparagus, grilled fish or Gazpacho.

The Producer

Tokara offers anyone lucky enough to visit a unique combination of award-winning wines, brandy and olive oils, fine art, a restaurant and a deli. The winery, just outside Stellenbosch, is nestled among vineyards on the crest of the Helshoogte Pass with sweeping views across False Bay all the way to Table Mountain. Tokara prides itself on making wines that are site specific, with initial plantings on the southern slopes of the Simonsberg Mountain followed by two other farms: Highlands in the Elgin district and Siberia in the Hemel-en-Aarde Valley near Hermanus.

The Winemaker

A graduate of Stellenbosch University with double science degrees in both geology and geochemistry followed by in oenology and viticulture, Miles Mossop cut his winemaking teeth at Knappstein in the Clare Valley, Australia and then in Condrieu, France and at Planeta in Sicily. Returning to the Cape in 2000, he came straight to Tokara and has completed every vintage since that date.

The Region

A range of classic varietals are planted on the slopes of the estate, some up to 400 metres above sea level and it's this altitude and cool sea air that are a contributing factor to the restrained and elegant style of these Stellenbosch wines. The grapes for the Walker Bay Sauvignon Blanc are sourced from the Siberia vineyard on the cool southern slopes of the Babylonstoren Mountain, a mere seven kilometres from the coast near Hermanus and at 285 metres above sea level.
