Vinas Alto Roble (meaning tall oak) call the beautiful town of Yerbas Buenas in the Maule Valley home, although vineyard sites are scattered the length and breadth of the Central Valley area in the Colchagua, Curico and Maule production areas. Timing proved right for founders Francisco Achurra and Patricio Larrain who bought a small Cabernet Sauvignon vineyard in the area in 1993. Growing recognition for Chilean wines led them to invest in neighbouring vineyards, with a gradual move towards the cooler, higher altitude sites.

Slow cooker Beef Brisket

A super-simple one pot recipe using a flavoursome cut of brisket. Try with a fruity, medium-bodied red to contrast nicely with the meaty, savoury sauce. The Chilean Rio Mataquito Cabernet Sauvignon will work a treat. Full recipe

Bonnievale Cabernet Merlot 2016, South Africa

A well-balanced wine that was a great pleasure to drink with or without food. It went very well with grilled pork loin steaks. The label says "unpretentious", and, for once, the label is spot on. Christopher

It was all thanks to a pioneering Scotsman named Christopher Forrest Rigg (you would have to be an intrepid explorer with a name like that) that the town and farming community of Bonnievale came in to existence. Arriving in the arid Breede River Valley, due east of Cape Town, at the turn of the 20th Century, he set about developing the basis for an irrigation canal that would allow the entire valley to be farmed. As a parting shot he named the town and valley Bonnievale (Beautiful Valley) after his grandfathers_ home in Scotland. One of three wineries in the valley by the 1990_s, Bonnievale Cellar joined forces with its neighbours in 2006 to create a co-operative of more than 100 grape growers.

Roast Pheasant with Lemon & Rosemary

Contrast the delicate savoury flavours in this dish with a light to medium-bodied red with good fruit intensity. You don_t want to go for overly tannic styles which will overpower the meat so stick to soft, supple styles such as New World Merlots or lighter European reds. Full recipe

Baked Stuffed Aubergine With Walnut and Roquefort

With a lot of strong, rich flavours in this baked dish, you need to match the salty cheese with acidic tomato, savoury aubergine and nuts. Try a medium to full-bodied red with enough fruit flavour to contrast with the saltiness in the cheese, an Italian red such as the Pergolino Rosso is a great match. Full recipe

The history of Cariñena has been closely related with wine for many centuries and the reputation of its wines are now being recognised around the world. In 1415 when the King of Spain heard that Fernando 1 of Aragon was planning a trip to Nice he asked Fernando to take with him some of the wines from Cariñena. In 2002 a new modern winery was built at Grandes Vinos with state of the art facilities but keeping many of the good traditions of Spanish winemaking
