Chablis

You might not realise that Chablis is closer to Sancerre in the Loire Valley than it is to most Burgundy vineyards. Made from the Chardonnay grape and produced in a tightly defined region to the north-west of the main Burgundy vineyards of the Cote d'Or, close to the town of Auxerre, UK wine drinkers are Chablis’ biggest export market, consuming over 5 million bottles of this delectable nectar. The vineyards are split in to Grand Cru, Premier Cru, Chablis and Petit Chablis, with the top wines on soils rich in minerals and fossils, a key element which lends Chablis it's steely, mineral structure.
