Jerez

The region producing Sherry, Jerez is centred around the town of Jerez de la Frontera in Andalusia on the southern tip of Spain. The world-famous fortified wine comes in a multitude of styles from dry and salty to sweet and unctuous. Sherry is made from the Palomino grape and styles of sherry include Manzanilla, Fino, Amontillado, Oloroso and Palo Cortado. Sherry is made using the Solera system whereby young wine is blended with older wines in a series of barrels called criaderas. The wine is covered with a film of yeast called flor which adds flavour to the slowly ageing wines to produce a delicious blend that is a combination of the old and the new, and there really is a style to suit everyone’s taste.
