Limoux Wine

Way back in 1544 local monks discovered a secret here that would revolutionise French wine: the means of making sparkling wine. And that was a long time before Dom Perignon claimed to be seeing stars too.

Just south of the walled city of Carcassonne, Limoux also happens to make some pretty nifty still wines too. Chardonnay is exceptional here; probably the best outside of its Burgundian heartland.

So too, the reds have much to recommend them, nicely balancing fruit and structure to make them ideal dinner table companions.
