Roasted Quail Wrapped in Prosciutto Recipe - With Wine Match

The classic gamey flavours of quail combined with salty ham call for a rich, decadent, earthy red wine with a liberal dash of spice.
Ingredients
4 QUAIL, CLEANED

50G BUTTER

4 SLICES OF PROSCIUTTO

2 TBSP OLIVE OIL

1 TSP THYME

100 ML WHITE WINE

12 MEDIUM POTATOES, PEELED AND QUARTERED

Recipe Method

1. Preheat oven to 180°C/350°F/gas mark 4.


2. Place the potatoes in a roasting tin with 2 tbsp olive oil, salt and pepper, and roast for 45 minutes.


2. Meanwhile, in medium-hot frying pan, add half the butter and sear the quails.


3. Season with salt and pepper and sprinkle over the thyme. Transfer to a roasting dish with the remaining butter. Wrap the prosciutto tightly round the quails, then cook for 20 minutes in the oven, adding white wine after the first 10 minutes.


6. To serve, place the quails on warmed plates and serve with the roast potatoes.
