Ageing wine in oak adds flavours as well as structure and complexity, while increasing the wine’s aging potential (if you can resist drinking it). We all know and love a creamy Chardonnay but cast the net a little wider and you might find a subtly oaked Chenin Blanc or Sauvignon Blanc that hits just the right spot.
